Setting up a new channel on my parents Free to Air

Hi There.
My parents have just heard that RAI 3 has just been released in Italy. I have looked this up on the internet and found that it is residing on Hotbird 2. Since we have had a very bad experience with the person who installed this equipment (basically took our money & ran) I have promised my parents that I will help them get the whole system up and running properly starting with RAI 3.
My question to this forum:
Is there anyone out there willing to walk me (via the forum) through the necessary steps of getting my parents systems up and running properly. At this stage all I can tell you is they have a Digital Free to Air Decoder, a ~ 2mtr Dish with motor and a lot of channels that can not be found.
Any advise (except getting a professional in at more cost) will be greatly appreciated.
